I want to use Azure to commission ES cloud.

If I start with size F1 can I later change to M8?

If I start with a single node can I later change to a three node?

Also what is ES recommend size for a production load?

Yes, you can! You are able to backup and restore to a larger instance.

Also what is ES recommend size for a production load?

C4 would be minimal for production use.

A note on F1, those are meant for dev/test purposes. F1 utilizes a burstable CPU class which may result in periodic QoS issues.
